The drowned octopuses are a well-known dish in the Borgo S. Lucia in Naples, where they take the name of octopus alla Luciana. Used for seasoning pasta, as a main course or even on hot slices of bread, these baby octopus can be prepared directly with the Thermomix. How to prepare poached baby octopus

To reduce the time, use baby octopus already cleaned, immediately ready for preparation. Otherwise remove the central bone, the eyes and the entrails that are in the head. How to prepare poached baby octopus

First of all clean the baby octopus emptying the pocket (some also remove the eyes and the beak, in my opinion they are more choreographed with).

Take a saucepan, pour in the squoolio (almost to cover the bottom) and put fry a clove of garlic integer (which you will remove at the end) and del chili pepper (adjust based on how much you like to eat spicy).

When it starts to fry, lower the heat and dissolve half a tablespoon of oil in the oil tomato extract helping you with a few drops of hot water.

When the tomato extract has dissolved, add the tomato sauce and half a glass of water.
Season with salt and put the baby octopus in it.
Cover with a lid e cook over medium heat for 10-15 minutes.

In the meantime, take the carasau bread and put it in a pan. Bake it for a couple of minutes in a hot oven at 200 C, it will lose the humidity and it will become very crunchy and light!

When the baby octopuses are cooked and the sauce has shrunk well, turn off the heat and serve.

Unlike what you see in the photo, I suggest you serve the poached octopus in hot soup plates, add fresh basil leaves, freshly ground black pepper and arrange carasau bread on the edges of the plate.

Let's say that this recipe can be considered a bit like my "Christmas present" since it received 4/4 positive votes in my house!
As I have already written on other occasions I have had the opportunity to follow several courses, some at the Intelligent Cooking School of Magazzino Alimentare.
All really interesting courses, which brought me even closer to the world of cooking, held by qualified professionals, chefs of haute cuisine.
Among these the chef Giuseppe Maffioli, of the Carlo Magno Restaurant in Collebeato (Bs) and also the reference teacher for cooking at Cast Alimenti.
I have been lucky enough, on several occasions, to taste his dishes and they have always known how to amaze and fascinate me both for the skill with which they are offered and for the always distinct taste of the various ingredients that compose them as well as the particular attention which dedicates to the digestibility of the dish itself, often exploiting the new technologies of the cooking vessel, of the vacuum, of the low temperature cooking ..
But let's get to the point. in the various courses I attended I tasted really fantastic poached octopus. The chef served them in a red sauce accompanied by white polenta. The baby octopus, before being added to the sauce, were cooked at 75 & # 176C, in this way they maintained a very special softness.
Here is that "softness" has "stuck in my head". and when I put something in my head. no matter how . no matter when but rest assured that I will!
I wanted to try the low temperature cooking technique using the thermomix temperature control.
Hence the idea of ​​this risotto, which I have always composed following the chef's teachings.

Some advices:
For the Thermomix procedure it is best to proceed in this order:

You can anticipate the first two by even a few hours and simply reheat at the time of use, in this way it will be easier for you to prepare everything.
While the risotto and the roasted octopus must be cooked at the moment.
