Ingredients
- ½ lime, cut into wedges, plus lime wheel for garnish
- 1 sage leaf, plus more for garnish
- 2 tablespoons Chartreuse liqueur
- 2 tablespoons London dry gin
Recipe Preparation
Bring honey and 1 cup water to a simmer in a small saucepan; stir until sugar dissolves.
Using a muddle or handle of a wooden spoon, mash lime wedges, 1 sage leaf, and 2 Tbsp. honey simple syrup in a cocktail shaker 4–5 times just to release juices and oils (don't mash to bits). Stir in Chartreuse liqueur and gin. Strain into an old-fashioned glass. Fill halfway with crushed ice, stir, then mound more crushed ice on top. Garnish with sage leaves and lime wheel.
Do Ahead: Honey simple syrup can be made 6 months ahead. Chill.
